DPP scan analytics & dashboard overview

Public GS1 DPP resolver hits are now counted in a privacy-preserving way: GET /v1/dpp/:id/stats per passport and GET /v1/workspace/stats/dpp for the dashboard home (30-day trend + top DPPs).
